Cajun Pesto

So I thought it was just going to be the brunch post, but I figured…why not show ❤️💖Valentine’s Day❤️💖 dinner too? Boom, we got Cajun Pesto.

                                                

I didn’t want anything too complicated and had been thinking about making pesto all weekend. Now thanks to my Aerogarden, my basil plant is flourishing. I made basic pesto (basil leaves, pine nuts, olive oil, garlic, grated Parmesan cheese, salt, and pepper) in a blender and pan sautéed the shrimp in oil and Old Bay. Combined everything in a skillet with the help of some butter, spaghetti noodles, and a little pasta water. 


                                                 

Cooked and stirred over high heat until combined. Garnished with basil leaves and shaved parm. 


This will leave you with a clean plate.
