Moroccan Butternut Squash Soup
After that Adobo Chicken and Poblano soup, my stomach eagerly asked me what was next. I had my eye on some butternut squash that I had been meaning to use. I always thought butternut squash was my personal confirmation that fall was here and I was ready to submit to my autumnal bliss.
The dish inspired by Half Baked Harvest took me on a vacation (and I’ve never been to Morocco). The heat was a nice alternative to the cool weather outside (at the time) and an amplified butternut squash soup, it was a win-win!
