Adobo Chicken Tacos w/ Corn Avocado Salsa

 



Whipped up some last-minute tacos tonight and they were BANGIN.

 

I marinated chicken thighs in adobo seasoning, salt and pepper and then pan-fried until crispy and charred. For the Corn Avocado Salsa, I combined sautéed frozen whole kernel corn, cubed up some avocado, chopped up red onion and cilantro.


Then I drizzled in lime juice, salt, pepper, and tossed together. 


With some warm corn tortillas, I layered the chicken followed by the salsa and topped with sour cream and crumbled queso fresco. 


My plate was clean before I could process 😋
