Caribbean Pineapple Wings

Hey ya’ll, so I have something to confess. This has been something I’ve been waiting to get off my chest and I’m finally ready to admit...that I am a wing fiend. 

It’s my favorite food alongside shrimp and honestly, who doesn’t love chicken?


Whoo, that felt great! 

Anyway, heeeyyy peeps! Hope your Black History Month is treating you well. In the spirit of Superbowl Weekend, I present to you my Caribbean Pineapple Wings! 


I’m a sucker for a good wing flavor and always wanted to try to make one that I felt encompassed my palate and personality. I’m a sweet and savory kind of person and this checked off both boxes. 


For the savory, I made a Caribbean spice rub mix of allspice, cinnamon, nutmeg, brown sugar, salt, cayenne pepper, paprika, ginger and ground pepper



To kick up the sweet, a pineapple syrup came to mind: With a mix of chopped, fresh pineapple stirred with sugar and a little water. 


Once the pineapple softened and the sugars broke down, I incorporated the spice mix on low heat until combined and tossed the air fryed wings in the sauce.
