Chicken Noodle Soup


Can this polar vortex leave now? Don’t get me wrong, blanket burritoing myself into my couch for hours while Netflix (and YouTube) binging is top tier cozy. The struggle is also real when you still have to go into work.

To give me some warmth and comfort, I decided to try my hand making chicken noodle soup. It was easier than I thought and with a few added ingredients, I can tell you this will definitely go down in the FOF cookbook (We’re manifesting here, mkay?). 


I started with chicken breast and some sprinkles of salt and pepper on each side. With a couple teaspoons of olive oil, I did a sauté on high in my instant pot, about 5- 6 minutes on each side. 


With the chicken resting, I sautéed garlic, celery, carrots, onions until soft and translucent. I also added kale and mushrooms because that’s how I roll. Once the veggies were done, I put in chicken broth with more salt and pepper, bay leaves, and now sliced chicken. 


Once every thing came to a simmer, I added my noodles until cooked. I took out the bay leaves (those are not that yummy) and served up!


My childhood chicken noodle soup normally came out of a can so it was a little nostalgic making my own rendition as an adult.
